The BEST Spinach Artichoke Dip

Are you a dip connoisseur? Then this recipe is for you! I made this for a wedding shower this weekend and several folks said it was the BEST Spinach Artichoke Dip they’d EVER had! WOW!

Of course, this isn’t a Whole30 recipe, but there’s always a party for someone or something where you want to splurge just a little and enjoy something really rich. And there’s a bonus to this recipe…you can freeze it! Yes, you heard me right…keep reading!

(This recipe came out of our church cookbook so other than my friend Sonya who submitted it, I do not know the original author. I did google but didn’t find one exactly like this on the web.)

The BEST spinach artichoke dip for a crowd or just one

The BEST Spinach Artichoke Dip

  • ½ c butter
  • 1 cup chopped onion
  • 10 ounces frozen chopped spinach, thawed and drained well
  • 14 ounces artichoke hearts, drained and chopped
  • 8 ounces cream cheese
  • 8 ounces sour cream
  • 1 c shredded Monterey Jack cheese, divided
  • 1 c grated Parmesan cheese, divided
  • 2 Tbsp hot pepper sauce
  • Salt to taste

Preheat oven to 350 degrees. Grease a 9×13-inch baking dish and set aside.

Melt butter in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in remaining ingredients using only ¾ c of each cheese. Stir until well-blended and heated through. Pour mixture into prepared baking dish, and top with remaining cheeses. Bake about 10 minutes, until cheese starts to brown. Serve with tortilla chips.

Yield: 4 cups of dip or 32 2-Tbsp servings

Cube it! WHAT???

Yes, any leftovers (or the whole thing for that matter) can be frozen in ice cube trays for later use! I’m talking delicious dip just waiting in the freezer for surprise guests to pop in or for that last minute game night. Here’s how…

Freeze spinach artichoke dip in ice cube trays

Brush inside of each cube form with olive oil. Stuff each cube with dip, pressing it down into the form and leveling off at the top. Freeze until solid (I just did mine overnight for ease). Pop out cubes and package in a freezer baggie. That’s it!

Now you can defrost only as much dip as you need in no time at all in the microwave. As long as you’ve got a bag of tortilla chips (or a box of crackers), you’re ready for any snacking need!
