Easiest zoodles ever and a recipe renovation

I love my spiralizer, BUT I had never tried a julienne peeler…and now I’m hooked. Literally saw a video on social, found I had one, grabbed a zucchini, and made the easiest zoodles ever in minutes!

I’m in my Whole30 reintroduction and am doing one thing at a time. Saturday was gonna be peanuts, and I wanted to make my favorite Peanut Thai Salad…but it called for pasta. Could I make it with zoodles instead? I did, and it was beautiful!

Here’s this wonder tool! After washing the zucchini, I simply pulled the peeler through the zucchini (towards me) and came away with perfectly uniform zoodles. I “peeled” each side down to the seeds, then turned it, and did the next side until I was done.

(My gut is that it wouldn’t work for the other things I spiralize like butternut squash, sweet potatoes, or carrots, but then again, it doesn’t go very deep so maybe I’ll give it a “gentle” try and update here later.)

Recipe Renovation: Peanut Thai Salad

I used this on the Whole30 for my peanut reintroduction day so peanuts were the only thing non-compliant I allowed myself to use. I really liked it and could see doing it without the nuts altogether or maybe substituting cashews. (see the original recipe here)

  • ¼ c lime juice
  • ¼ c coconut aminos
  • 2 Tbsp defrosted apple juice concentrate
  • ½ c peanuts, divided
  • 1 medium to large zucchini, “zoodled” with julienne peeler
  • 1 c carrots, cut in matchsticks
  • 1 c flat pea pods, cut in matchsticks
  • 1 c red bell pepper, cut in matchsticks

Combine lime juice, coco aminos, apple juice concentrate, and ¼ c of the peanuts in a blender and pulse until smooth.

Combine all vegetables in a bowl. Top with all except ¼ c peanut sauce; toss to combine. Refrigerate at least one hour if you can. Before serving, top with remaining sauce and nuts for more crunch.

(Note: where the original recipe calls for honey, I used half that amount for apple juice concentrate. Even at that mine was a little runny, but I didn’t have the hour to refrigerate either.)

This turned out to be a really colorful salad…a treat for the eyes as well as the tastebuds, but I’ll definitely be looking for other uses for the easiest zoodles ever. Just too fun to make!     1. I can so easily get “locked in” to doing something a specific way with a specific tool. I’m working hard on being more flexible, and this was a great find!
