In general, I’m not a recipe creator…more of a recipe renovator. But this week, I got creative in cleaning out the freezer, and pulled together four tropical fruits (IS coconut a fruit? Find out here) to make a sweet frozen tropical treat.
We’ve only just gotten a whiff of springtime, and here I am moving right on past it. I’m ready for grilling and eating outdoors and beating the heat with frozen treats. Parts of this one take a little prep time so do plan ahead. Come on, summer…I’m ready.
Tropical Freeze
- 1 c crushed pineapple
- 1 banana, peeled and then frozen in chunks
- 1 mango, cut into chunks
- 1/3 cup full fat coconut milk
- Unsweetened coconut flakes (optional)
Open a can of crushed pineapple, drain (someone in the house is gonna love you for the juice!), then freeze flat in 1 cup increments in freezer bags. If you get the small 8 oz can, that’s the whole can. If you get the 15 oz can (like mine above), just split it in half. Just before mixing, break the frozen pineapple slush into several pieces.
Peel a banana and freeze in individual chunks (read the in-depth instructions here).
Cut mango into chunks (those instructions are here). Mine was just sitting on the counter ready to go, but you could pre-freeze the individual chunks as well.
Whisk your coconut milk so the fat is fully incorporated with the liquid. Pour half into the bottom of the blender jar, add all the fruits, then top with remaining coconut milk. Process on high speeds until fully blended.
I found I needed to stop periodically and push the frozen parts down into the liquid better. It definitely goes better if you have broken up the pineapple first. My banana was frozen in two pieces so having that in chunks would have made the blending easier, too.
Don’t over mix but do check with a long-handled spoon to make sure all the chunks are gone. Quickly spoon into four dessert cups, top with coconut flakes if you want, and serve immediately.
Who doesn’t like a frozen treat?
I’m always cold (ask anyone who knows me) so if I like a frozen treat when it’s between 30 and 70 degrees F, then this should be a hit with most folks. Sometimes cleaning the freezer leads to great results!
