Making Strawberry Vinaigrette

Long ago, I went to a dinner whose salad had a sweet tart dressing I loved. You guessed it…it was Strawberry Vinaigrette. But since my foray into Whole30, I don’t just go out and buy salad dressing as most include sugars. Recently a friend shared that she makes her own with only 3 ingredients. So now I’m making Strawberry Vinaigrette myself…and you can, too!

While I love when people give me simple recipes, I do get a little stressed when they can’t give me dimensions (how much of each ingredient). This is particularly important any time vinegar is involved as my husband is a super taster and VERY sensitive to vinegar’s taste. So, I had to test and figure out the formula for myself.

The recipe

Three ingredients to make strawberry vinaigrette

So, you can make as much or little as you like, I’ve done this recipe as “parts.” You can make each “part” 1 teaspoon or 1 cup. It doesn’t matter. I like to switch dressings frequently so I never make more than a cup total at a time. Here’s the recipe:

  • 2 parts strawberries
  • 1 part white balsamic vinegar
  • 3 parts light olive oil

Core and slice your berries before measuring (see how to do this easier here). Once you’ve measured, put them in a blender cup, and add the vinegar and olive oil.

Give it a blitz in the blender until the fruit is all chopped and incorporated.

This version has a pretty good zing from the vinegar. Taste test it and if you want sweeter, add 1 more part strawberries. (I ended up doing this for my husband.)

If you prefer a lighter vinegar, plain rice vinegar would be a good option (now that I think of it, that might work better for my husband so I guess I’ll be testing again soon!). Apple cider vinegar would work as well, but red wine vinegar would change the color, and it’s so beautiful as it is, I wouldn’t mess with that.

You could also use regular extra virgin olive oil. I chose light because I didn’t want the strawberry to have to compete with the olive taste.

Why buy salad dressing?

I’m serious…I’m not sure commercial dressing could get better than this. The same recipe works for raspberry, peach, AND mango, too! And no chemicals, preservatives, or added sugars…just fabulous taste! Share with friends and add new spark to your salads!
