A fun, handheld meal!

I know you’ve seen the folded over quesadilla packet idea, but have you really thought about how versatile this thing is? You can almost put anything in it and have a fun, handheld meal in minutes!

While my friend Debbie was visiting, we made these one night. Then she kept dreaming up other ideas while I went to the fridge and sought out leftovers to create something unique.

(Note: if using standard flour tortillas, these are not Whole30 compliant. However, I have it on good advice that this cassava tortilla recipe is a great one if you want to try a hand at making your own…you might have to make them bigger than the recipe says. Otherwise, you can make them compliant depending on your choice of ingredients.)

The formula

It’s so easy…a burrito-sized tortilla with one radial cut, 2 quarters have a binder, and the other two quarters can be just about anything.

With the cut in the middle at the bottom, fold up the left bottom quadrant first, then fold the left over the right, then fold the right top down over the final quadrant.

Press it together, heat and brown in a greased skillet and you’re golden…literally!

Pizza

Classic pepperoni pizza was easy. Mozzarella slices were the binder (first and last quarters), then we added pepperoni slices and pizza sauce. If you fold the binder up first, it helps hold the loose ingredients in place. Then the final binder seals the packet.

Breakfast

I just saw a version of this last week which inspired me to want to do this. We love scrambled eggs and meat so why not a breakfast quesadilla packet? We used bacon, but you could also use sausage (patties might work a little better than loose) or Canadian bacon.

Greek

I’ve been loving roasted veggies with Greek seasoning recently so I wondered if that could be adapted for this. I usually cube the veggies for roasting but this time I kinda cut them in flatter slabs.

I had pork tenderloin medallions leftover, so I sliced them in half (made them flatter too) and added them in one quarter. And my binder was homemade garlic aioli…YUM!!! (see picture above in the formula section)

So many possibilities to get creative!

Debbie continues to dream up variations like…

  • Ham and cheese, with apple slices and a mayo/mustard blend
  • Corned beef and Swiss, with 1000 island dressing and sauerkraut
  • Pulled pork with cole slaw, BBQ sauce and Cheddar
  • Smoked salmon and cream cheese, with tomatoes and caramelized onions
  • Chili, Fritos, cheese sauce, onions

I’d like to try…

  • The pizza version with homemade Italian sausage
  • Fajita chicken and beef strips, with caramelized peppers and onions and guacamole (or queso blanco when enjoying my food freedom)
  • Something in combination with steamed broccoli (one of my current obsessions)

Try it as dessert!

I made a banana/nut butter version and a strawberry Nutella version. Both were spot on for my sweet tooth. Marshmallow fluff and other fruits could be an option as well.

The sky’s the limit for this handheld meal

Super easy and lots of fun, this could be a meal in your regular rotation with different ingredients every week. Too bad there’s not a day that starts with Q for quesadilla! What would you want in yours??? Drop your ideas in the comments below!

    1. Fun little project to just sit around and see what you can come up with! Could even do a “cold” version and use a blanched collard leaf or a leafy green lettuce leaf!
