Pumpkin spice lattes, muffins, candles and even body products. I like pumpkin and it’s accompanying spices, but what if your favorite fall flavor is apple?
Well if you’re an apple lover like me, here’s a couple of easy and delicious recipes you might wanna consider for last minute holiday fare. Warning: these are NOT Whole30, but it’s Thanksgiving…live a little then go back to healthier choices!
1) Super easy Rustic Apple Pie
To my great disappointment, I find dominosugar.com has taken this original recipe down. But if you like easy recipes like me, you’ll love this one.
Basically, it’s just a large pie crust rolled out to 11 inches on a foil covered cookie pan. Lay out your favorite apple pie filling in the middle, then fold the edges of crust over it. Bake at 425 degrees 15 minutes then another 30 minutes at 350 degrees. YUM!
Make it EVEN easier with a commercial rolled pie crust…depending on how much filling you have, you might need to split it between the two crusts in the package.
2) Fresh Apple Cake!
About 25 years ago (long before I dreamed of blogging), I edited a few custom cookbooks, including one for our church. This recipe was turned in for that book and quickly became our favorite. The story was that in the depression, even if you got a bad set of apples (beat up or tasteless), at least you could make apple cake!
- 4 c apples, peeled and diced
- 2 c sugar
- 2 c flour
- 1-1/2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 2 eggs
- 3/4 c oil
- 2 tsp vanilla extract
Combine apples and sugar in large bowl. Stir well so apples are completely covered and won’t turn brown. Add flour, baking soda, cinnamon and salt; again, mix well. In a separate bowl, whisk together eggs, oil, and vanilla. Add egg mixture to apple mixture, blending until thoroughly moistened. Pour into greased 9×13 pan. Bake at 350 degrees for 50 minutes or until toothpick in the center comes out clean. (The recipe says it freezes well. I am testing that right now! I’ll report back…)
Dessert Sauce
- 1 c sugar
- 1/2 c butter
- 1/2 cup heavy cream (I used coconut milk this time and it worked fine)
- 1 tsp vanilla
Combine sauce ingredients in medium saucepan. Bring to a boil; boil and stir 3 minutes. Let cool then serve over warm cake. Keep leftover sauce in a jar in the fridge.
