I’m coming to grips with the fact that I’m lazy. And I don’t think I’m that different from anyone else. Once I get ready to eat, I’m pretty much READY…and whatever I’m eating better BE ready or at least fairly quick to prepare. So, when I looked at my favorite meatball recipe and thought of the time it takes to roll those out, I wondered…Can you cook meatballs as a meatloaf to save time?

Mix up nuts for your savory snacking
I’m always up for a snack…crunchy and savory things are the best. When I had my frozen shoulder, corn was keeping me inflamed – so no more popcorn. When I went Whole 30 and found that grains cause me trouble, goodbye crackers and pretzels. How would I feed that savory snack craving? That’s when I learned about nut mixes.

I’ve found various ingredients out of stock during this quarantine period, but so far that hasn’t stopped my cooking efforts. I was only able to find bone-in chicken thighs this shopping trip. So, I skinned my own!

If you’ve ever thought “Cooking’s too hard” or “Cooking takes too long,” or “Eating healthy is too expensive,” THINK AGAIN. What if I told you my supper last night was Whole 30, took 35 minutes to prepare and cost under $1.75 per serving??? Does this change your mind?
