The Whole30 at camp: 2022 edition

Memorial Day brings church camp for us, and a challenge for me to continue my good eating habits. I’m not currently on the Whole30 but rather experimenting with my food freedom. If, like me, you have special dietary needs, it is possible to do something like the Whole30 at camp…but it does take a little planning.

This is the second year for me, and honestly, I think prepping for this year was harder. Maybe I thought I could relax because I had done it before, but somehow, I just wasn’t done the night before. And since we left for camp right after church, the only time I had left to finish was Sunday morning – not ideal.

Leftovers are a great place to start

I went through the fridge first to see what was left and found a good bit. I had some Spinach and Artichoke Risotto (I used cauli rice) and Paleo “Cajun” Skillet, as well as roasted vegetables. Plus, I remembered the last time I made meatloaf, I made a second and froze it – just for camp! I even had one serving of my favorite “Gotcha Rice” in the freezer as well. But this wasn’t enough to get me through the whole week.

Adding my favorite Whole30 recipes

There was a SUPER sale on cole slaw mix so I made what I call “Garlic Cole Slaw” (based on this Broccoli Slaw). And I made my favorite cold summer lunch for the heat of camp – Fall Protein Chicken Salad (in the Whole30).

I’m a sucker for eggs and sausage in the mornings; so, it was pretty simple to scramble those together and pack fruit for breakfast.

A new recipe to share

I’ve been wanting to try Cauliflower Garlic Hummus (legume-free recipe link as soon as I can find it!!! – I’m feeling a garlic theme), and letting friends taste test is always fun. So, I made that and brought along cassava chips and slices of English cucumber to dip.

And one traditional camp meal

You just gotta have grilled burgers at camp! This time they had turkey burgers, and I dressed mine up with Cajun seasoning and a lettuce wrap. Then I added some Greek marinated mini peppers (another sale item and yes, I like to mix my ethnic flavors). So yummy it didn’t hang around long enough to get a pic!

Success on the horizon

My biggest problem with certain foods (and it tends to be combinations) is headaches. So, can I get through this camp week without ‘em? We’re halfway through as of this writing, and I haven’t had one yet. I’m not eating strictly W30, but rather sticking to only one possible trigger food at a time. Maybe this is what my food freedom will ultimately look like.
